This recipe is a huge hit! I bring this to almost every cookout or potluck and always leave with a clean bowl! It is simple, healthy, kid-friendly and absolutely delicious. Enjoy!
INGREDIENTS:
2 Sweet Potatoes
2TBsp Extra Virgin Olive Oil
For the dressing:
1/4 c. Dukes Mayo
1 1/2 TBsp. Red Wine Vinegar
1 TBsp. Extra Virgin Olive Oil
1 1/2 tsp. Dijon Mustard
1/2 tsp. Sugar (raw or coconut sugar)
1/4 c. Parsley, chopped
3 Green Onions, chopped
3 Strips of Bacon
Salt & pepper, to taste
Peel & cube the sweet potatoes & toss with 2 TBsp. of EVOO, sprinkle with salt & pepper and roast at 400 degrees for about 20 mins, until soft.
Cook bacon until crispy- I do this in a cast iron pan unless I am doubling the recipe, then I cook it in the oven on a slotted pan, while the sweet potatoes cook, for about 15-18 mins.
While the sweet potatoes cook, mix together mayo, vinegar, oil, mustard & sugar. Set aside.
When the sweet potatoes are done, add them to the bowl with the sauce and crumble the bacon on top, along with the parsley and green onion- mix together & serve.
This is also great served cold!
