Cinnamon & Sugar Apple Cobbler

Living in the VA mountains and having a birthday in October, it is only natural that Fall is my favorite season. I love it even more now that I live in Hokie country. (Sorry UVA fans!) Watching the Blue Ridge Mountains come alive in vibrant orange, maroon & yellow hues is one of the most breathtaking sights!

 A few weeks ago, we got a tease from Mother Nature. The days felt crisp and cool and I was really hoping Fall would come a little early this year... But I should have known better. There is a local saying,  "If you like the weather,  just wait a minute!" So, of course, two days later it was sweltering again!

Ok, lets rewind to that faux Fall week. I was feeling all cozy and wanted delicious comfort food. So, for dinner I made Balsamic Beef Roast with Creamy Cauliflower and my daughter, who loves to help me cook, asked if she could make dessert. Apple Cobbler was the first thing that came to my mind and that I had all of the ingredients for. Boy, did she rock it! Crispy, cinnamon-sugary goodness on top and soft, gooey apples underneath... Mmmmmm!  Everyone loved it and I can guarantee it will hold up to any traditional, gluten-full recipe. It is so simple, my 9 year old made it completely on her own! If you have been GF and have not had a traditional Apple Cobbler, give this recipe a try. It will definitely become your new go-to recipe!

The only thing that could have made it better is a scoop of Homestead Creamery Vanilla Ice Cream. If Homestead Creamery is not available in your area, I am truly sorry... It is THE best! You could always plan a trip to our beautiful state this Fall, get some amazing ice cream, and take a drive on the Parkway once the leaves begin to change... You will leave loving this season as much as I do!

INGREDIENTS

5-6 Gala or Granny Smith Apples, peeled & thinly sliced

1 c. Butter, melted

2 c. Sugar, (coconut sugar works well too)

2 c. Cup 4 Cup Gluten Free All-Purpose Flour

2 c. Milk (for non-dairy option use almond milk)

2 tsp. Baking Powder

1 tsp. Lemon Juice

1 tsp. Cinnamon

1 TBsp. Cinnamon Sugar, for topping

Preheat oven to 350 degrees.

Lightly grease a cast iron skillet or 8x8 baking dish with butter. Toss sliced apples with lemon juice and cinnamon.  Add apples to the skillet. Pour the melted butter over the apples.

Mix together the remaining ingredients until a batter forms. Pour over the apples. Sprinkle the cinnamon sugar over the top.

Bake uncovered for 40-45 minutes, until golden brown.
